Swine City is the project of a group of friends who started in home brewing, including owners Dan and Debby Evans. Head brewer is Justin Chaney, who came from Rivertown Brewery and there's also Chris Schulz, taproom manager.Schulz said their approach to brewing is not to concentrate on certain styles, but to aim for excellent examples of a number of styles: a blonde ale, an IPA, New England IPA, a sour, a Berliner, a stout, etc. They will start with 6-8 beers in the tap room and in kegs to distribute to bars and restaurants.
They plan to begin canning soon.
The taproom is at 4614 Industry Dr. in Fairfield, an industrial area off Symmes Road. In addition to the taproom, there's a 2,600 square foot patio and a yard for outdoor activities in good weather. It will be a family-friendly vibe, said Schulz. They will rely on food trucks to provide food.
"We're the first brewery in Fairfield, but we'd love to see more," said Schulz. "We really would like to help our community by being an attraction, so people will come to Fairfield to visit."
